- 1 mug of raisins

- 1 cup dried fruit (raisins, sultanas, or currants, or a mix)
- 1/4 cup chopped nuts (optional, walnuts or almonds work well)
- A pinch of salt
Instructions:
- Prepare the Air Fryer:
- Preheat your air fryer to 320°F (160°C) for about 5 minutes. If your air fryer requires a liner or parchment paper, line the air fryer basket with parchment paper (making sure to leave enough space for air circulation).
- Mix Wet Ingredients:
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy. You can use a hand whisk or an electric mixer for this.
- Add the egg, milk, and vanilla extract to the butter mixture, and beat well to combine.
- Add Dry Ingredients:
- Sift the self-raising flour, cinnamon (if using), and salt into the wet ingredients. Stir until just combined.
- Gently fold in the dried fruit and chopped nuts (if using). The mixture will be slightly thick, but this is normal.
- Prepare the Baking Pan:
- Grease a small loaf pan that fits into your air fryer basket (or use a silicone loaf pan, if you have one). Make sure the pan is no larger than 7 inches in length, as this will allow proper air circulation for even baking.
- Pour the Batter:
- Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
- Air Fry the Tea Loaf:
- Place the loaf pan in the preheated air fryer basket. Cook at 320°F (160°C) for about 25-30 minutes, or until the top is golden brown and a skewer or toothpick inserted into the center of the loaf comes out clean. Cooking times may vary depending on the model of your air fryer, so check around the 20-minute mark to see how it’s progressing.
- Cool and Serve:
- Once the tea loaf is baked, carefully remove the pan from the air fryer and let the loaf cool for 10 minutes before transferring it to a wire rack to cool completely.
