  • Cook Time: 12–15 minutes
  • Total Time: 30 minutes
  • Servings: 8 cakes (approx.)

Ingredients: Garlic Parmesan Air Fryer Mashed Potato Cakes

  • 2 cups cold mashed potatoes
  • 1 large egg
  • ½ cup shredded Parmesan cheese
  • ¼ cup breadcrumbs (plus extra for coating)
  • 1 clove garlic, finely minced (or ½ tsp garlic powder)
  • 2 tbsp chopped green onions or chives
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley (optional)
  • Olive oil spray (for air fryer)

Instructions

1. Prepare the Mixture

  • In a large bowl, mix together the mashed potatoes, egg, Parmesan, breadcrumbs, garlic, and green onions.
  • Season with salt and pepper to taste.
  • Mix until fully combined — the mixture should hold together when pressed.

2. Shape the Cakes

  • Scoop about ¼ cup of the mixture and form into a patty (roughly ½ inch thick).
  • Lightly press each cake into extra breadcrumbs for a golden crust.

3. Preheat the Air Fryer

  • Preheat your air fryer to 375°F (190°C) for 3–5 minutes.

4. Air Fry the Potato Cakes

  • Spray the air fryer basket with olive oil spray.
  • Place the cakes in a single layer (cook in batches if needed).
  • Spray the tops lightly with more oil.

Air Fry at 375°F for 6–7 minutes per side, flipping halfway, until golden brown and crispy on the outside.

5. Serve Hot

  • Garnish with extra Parmesan and fresh parsley if desired.
  • Serve with sour cream, garlic aioli, or even ketchup.

Tips & Variations

  • Make it cheesier: Add shredded mozzarella or cheddar into the mix.
  • Gluten-free? Use almond flour or gluten-free breadcrumbs.
  • No air fryer? Pan-fry in oil on medium heat for 3–4 minutes per side.
  • Add-ins: Bacon bits, sautéed onions, or jalapeños for a flavor boost.
